What’s the wine like?
She’s a very unique wine is, old (well young) Esi. Don’t expect big bad Cab Sav tannins or developed deep red vibes as Esi is sherbety, with aromas of nectarines and rhubarb. She’s complex and textured and was aged in old French oak barrels, so expect a lick of oak… She’s English so expect slightly higher acid than you’d think and she’s got a touch of herbaceousness to her.
So how was Esi made?
So first off, the grapes for Esi were grown in Herefordshire, under polytunnel. We work closely with a brilliant vineyard who are on the forefront of innovation and pushing the boundaries (so we are aligned). You don’t see Cab Sav grown in the UK much (read never) simply because you just can’t get the fruit to decent levels of ripeness to make them good for still (or even sparkling) wine. However, when you really look after the vines and ripen them under cover, you can just about get there….
We hand harvested the grapes and rushed them back to London. The plan was to make these grapes into a white Cab Sav. Well, that was a little ambitious as it turned out. When we whole bunch pressed the grapes in our bigger press, there was a load of colour that came out from the skins. We could’ve filtered this juice to make it white but we didn’t want to artificially muck around. If it’s pink, it’s pink.
So, whole bunch pressed, fermented in stainless steel, aged in old French oak. Then put into bottle. We’re really pleased how she turned out…. Give her a taste.
