The grapes
The benefit of being an urban winery that works with small vineyards is that we can cherry pick the best fruit, grown by the best people. Vineyards do not always have the best growing seasons year after year. If the winery is attached to the vineyard, you generally have to make wine from these grapes. We do not have this problem. Just like a chef who can select in-season vegetables from the best growers, we can change suppliers and pick the best grapes depending on the weather, regional variances and other external factors.
This also allows us to source 50% of our grapes from Europe, such as France, Italy, Spain, Portugal and Germany, while the rest comes from sunny England. Working with grapes from such diverse climates means there are almost no limits to what styles we can make!

Our method
Wherever they come from, our grapes are hand-harvested and put into small crates, keeping them intact for the journey ahead. Then they are shipped to London in refrigerated trucks, set to 2 degrees Celsius to stop any fermentations from occurring en route. Once at the winery in Walthamstow, the winemaking team processes the grapes: From destemming, pressing and fermentations to ageing and bottling – it all happens right here in London.
